This week I’ve been buying asparagus again. Walmart has it for $1.88 and I love fresh asparagus. I wasn’t sure what I was going to do with it, but I know The Healing Power of Asparagus and I love the taste. I brought them home and sprayed Veggie Wash on the stalks, rinsed them, then stood them tips up in fresh water in a tall container in the fridge. The first night I sauteed some with mushrooms and yellow bell pepper in a stirfry. The next morning I made an asparagus and (Jarlsberg Lite) cheese omelet using Eggbeaters. For lunch, I made my Healing Asparagus Soup. That night, I snacked on the fresh stalks as I watched tv. For breakfast the next morning, an asparagus omelet on a bed of fresh steamed spinach. For lunch, stirfried with noodles. For dinner, sauteed with chicken and scallions. Asparagus raw in a salad with carrot and pineapple. Another omelet the next morning. Oh, asparagus, I love you so!
