{"id":3561,"date":"2009-07-08T18:42:02","date_gmt":"2009-07-08T23:42:02","guid":{"rendered":"http:\/\/horizonsmagazine.com\/blog\/?p=3561"},"modified":"2009-07-08T18:42:02","modified_gmt":"2009-07-08T23:42:02","slug":"superfast-lowfat-carrot-hummus-spinach-wrap","status":"publish","type":"post","link":"https:\/\/horizonsmagazine.com\/blog\/superfast-lowfat-carrot-hummus-spinach-wrap\/","title":{"rendered":"Superfast Lowfat Carrot Hummus Spinach Wrap"},"content":{"rendered":"<p>I first came across Andrea&#8217;s blog <a href=\"http:\/\/www.mychihuahuabitesblog.com\" target=\"_blank\">My Chihuahua bites<\/a>! when I was Googling the words &#8220;Andrea&#8217;s blog&#8221; and &#8220;Andrea Leigh&#8221;.\u00a0 No, I&#8217;m not weird, that&#8217;s my name too and I was excited to see it was a recipe blog.\u00a0 I like her idea about <a href=\"http:\/\/www.mychihuahuabitesblog.com\" target=\"_blank\">Tuesdays At The Table<\/a> and wanted to contribute, so I pulled up my favorite healthy, vegetarian lowfat recipe.\u00a0 It&#8217;s a wrap that I created, trying to duplicate one I got at Mother Earth Market in Ocala, FL.\u00a0 Mine turned out even\u00a0 better.\u00a0 I call it the <span style=\"color: #ff0000;\">Carrot Hummus Spinach Wrap<\/span>.<!--more--><\/p>\n<p>You will use <span style=\"color: #ff0000;\">10 Minute Hummus<\/span> for this recipe.\u00a0 I like <a href=\"http:\/\/goddessgrub.com\/Goddessgrub\/Parsley.html\" target=\"_blank\">parsley<\/a> and garlic in mine because taste and the health benefits. Try yours with and without.\u00a0 Here&#8217;s how to make the <span style=\"color: #ff0000;\">10 Minute Hummus<\/span> first.<\/p>\n<p>One 16 oz can of chickpeas or garbanzo beans<br \/>\n1\/4 cup liquid from can of chickpeas<br \/>\nJuice of one lemon (depending on taste)<br \/>\n1- 1\/2 tablespoons tahini<br \/>\n3 cloves garlic, crushed<br \/>\n1 teaspoon sea salt<br \/>\n2 tablespoons olive oil<br \/>\nA handful of chopped parsley, maybe fluffing up to a cup including fluffy tops<\/p>\n<p><span style=\"color: #ff0000;\">Preparation:<\/span><br \/>\nDrain chickpeas and set liquid aside for later. Combine remaining ingredients in blender or food processor. Add 1\/4 cup of liquid from chickpeas.
