Today I <a href=\"http:\/\/goddessgrub.com\/blog\/?p=675\">roasted some veggies<\/a>: cubes of eggplant, sweet potato and acorn squash, and mashed them together with some leftover\u00a0<a href=\"http:\/\/goddessgrub.com\/blog\/?p=135\">parsley hummus<\/a>\u00a0I&#8217;d made earlier this week. \u00a0I added a handful of kale, a tsp of tahini, a tbsp of extra virgin olive oil, a lot of lemon juice, some sea salt, and zapped it with the hand mixer. \u00a0Yummy and nutritious spread on celery stalks and toasted pita.
